Ingredients

  • 400 g penne
  • Salad
  • 1 Zucchini
  • 2 Garlic cloves
  • 3 tbsp olive oil
  • 100 ml Vegetable broth
  • 150 g mascarpone
  • 1 tbsp freshly chopped mint
  • 1 pinch lemon zest
  • pepper (ground)
  • Freshly grated cheese for topping (e.g., Pecorino)
  • mint for garnish

Instructions

    Cook the Penne in salted water until al dente. Wash, peel and dice or grate the zucchini.

    Peel and finely chop the garlic cloves; sauté briefly in hot oil. Add the zucchini, cook 2–3 minutes, then deglaze with vegetable broth. Stir in mascarpone, mint, and lemon zest; season with salt and pepper.

    Drain the pasta, combine with the sauce, serve on plates topped with grated cheese and garnished with mint.
