Ingredients
- 50 g walnuts
- 1 Shallot
- 1 Garlic clove
- 1 tbsp Vegetable oil
- 150 ml dry white wine
- 200 g Roquefort cheese
- 1 tsp starch
- 80 ml Vegetable broth
- 200 ml whipping cream
- Salt
- a splash of almond liqueur
- white pepper
Instructions

Roast the nuts in a pan without added fat until fragrant, then remove from heat and let cool slightly before roughly chopping.

Peel and finely dice the shallot and garlic. Sauté both in hot oil in a pot until translucent. Deglaze with wine. Crumble the cheese and stir in gradually. Whisk starch with broth and cream, then pour into the sauce while stirring. Simmer for about 5 minutes until thickened. Season with salt, liqueur, and pepper; add more broth if needed. Fold in the nuts at the end.
