Tomato Sauce with Asparagus

Ingredients
- 1 bunch spring onions
- 2 tbsp olive oil
- 400 g canned pizza tomatoes
- Salt
- Pepper
- 500 g Green Asparagus
- Basil
- 1 tbsp butter
- 4 tbsp freshly grated Parmesan

Clean, wash, and slice the spring onions into rings. Heat the olive oil in a pot and sauté the onions until translucent. Add the tomatoes and simmer over medium heat for about 7 minutes, allowing the sauce to thicken slightly. Season with salt and pepper.

Wash the asparagus, trim the woody ends, and peel the lower third of each spear. Cut the asparagus into ~4 cm pieces and boil in salted water until al dente. Drain and set aside.

Whisk the basil leaves, dry them, and cut into strips. Stir the butter into the tomato sauce, then fold in the asparagus and basil. Adjust seasoning and let simmer for another 3 minutes. Sprinkle freshly grated Parmesan over the sauce. This sauce pairs wonderfully with penne.
