Ingredients

  • 300 g stale white bread
  • 5 tbsp olive oil
  • Sea salt
  • Pepper (freshly ground)
  • 100 g mushrooms
  • 1 Garlic clove
  • 2 tbsp freshly chopped parsley
  • 2 tbsp lemon juice
  • 2 tbsp white balsamic vinegar
  • 60 g Parmesan cheese

Instructions

    Preheat the oven to grill mode.

    Slice the stale white bread into thin pieces, break into larger chunks and arrange on a baking sheet. Drizzle with 2-3 tbsp oil, season with salt and pepper, and place under the hot grill for about 5 minutes until golden brown, turning once halfway through. Remove from the oven and let cool briefly.

    Clean the mushrooms and slice them thinly.

    For the dressing, peel and finely chop the garlic. Mix with parsley, lemon juice, balsamic vinegar, remaining oil, salt, and pepper, then taste and adjust seasoning.

    Arrange the bread and sliced mushrooms on plates, shave parmesan over the top, and serve immediately.
