Ingredients

  • 50 g almonds
  • 40 g candied pineapple
  • 40 g raisins
  • 180 g milk couverture
  • 220 g unsweetened cornflakes

Instructions

    Soak the almonds in boiling water, drain, rinse, and while still warm squeeze the kernels out of their skins. Spread on a kitchen towel and let dry for at least 1 hour in a warm place.

    Preheat the oven to 40 °C fan. Line a baking tray with parchment paper. Chop the pineapple and raisins finely. Chop the almonds similarly and mix them with the fruit; spread the mixture on the tray. Warm the mixture in the oven for about 10 minutes.

    Chop the couverture and melt it over a double boiler. Remove from heat, then add the nut‑fruit mixture and cornflakes to the liquid chocolate and stir well. Scoop out small spoonfuls of the mixture onto parchment paper. Let dry for about 4 hours.
