Ingredients

  • 200 g peeled peanuts
  • 50 g Pumpkin seeds
  • 250 g fine rolled oats
  • 100 g coarse rolled oats
  • 100 g coarse oat groats
  • 200 g brown cane sugar
  • 50 g beetroot syrup
  • 325 g butter
  • 150 g milk chocolate

Instructions

    Preheat the oven to 160°C fan.

    Coarsely chop the peanuts. Mix 100 g peanuts with pumpkin seeds, oats and oat groats plus the cane sugar in a bowl. Warm the beetroot syrup and butter slowly in a saucepan, add to the bowl and stir well.

    Spread evenly on a baking sheet lined with parchment paper to about 1.5 cm thickness.

    Bake in the oven for 25–30 minutes until golden brown. Remove from the oven, cut carefully into pieces and cool on a wire rack.

    Melt the chocolate in a double boiler. Drizzle over the bars and sprinkle with remaining nuts. Let dry.
