Orange Crème Brûlée

Ingredients
- 2 untreated oranges
- 70 ml milk
- 160 ml whipping cream
- 1 Vanilla bean
- 50 g sugar
- 3 egg yolks
- 2 Tbsp brown sugar (for sprinkling)

Preheat the oven to 150°C with top and bottom heat.

Halve the oranges, carefully juice them so that the peel is not damaged and remove the membranes.

Bring the milk, orange juice, cream, scraped vanilla seeds and vanilla bean to a boil. Beat the egg yolks with sugar until creamy but not frothy; gradually stir in the hot vanilla-orange milk. Strain the custard through a sieve into the orange halves. Place them in a roasting pan or baking dish and pour enough hot water so that the halves are 2/3 submerged. Let the custard set for about 50 minutes (or 10–15 minutes longer).

Remove, cool, and chill in the refrigerator.

Before serving sprinkle brown sugar over the custard and flame with a kitchen torch. Serve immediately.
