Mince Pies

Ingredients
- 100 g raisins
- 100 g sultanas
- 100 g currants
- 25 g orange peel
- 25 g lemon peel
- 1 tart apple (e.g., Granny Smith)
- 100 g sugar
- 1 untreated lemon (zest and juice)
- 0.5 tsp gingerbread spice
- 50 ml brandy
- 250 g soft butter
- 75 g sugar
- 220 g flour
- soft butter (for the baking tray)

Finely chop the raisins, sultanas, currants, orange peel and lemon peel. Peel, quarter, core and finely dice the apple. Mix the dried fruit with the sugar, lemon zest and juice, gingerbread spice and brandy; cover and refrigerate overnight.

Beat the butter with the sugar until fluffy. Stir in the flour until a smooth dough forms. Wrap in cling film and chill for about 1 hour.

Preheat the oven to 180 °C fan.

Take small balls of dough and press them into the buttered cups of a muffin tin, forming a rim and trimming excess dough. Spoon the filling into the cups. Knead the remaining dough, roll it out to about 3 mm thick, cut circles and stars, place on top of the filling, press edges for circles and score the center with a sharp knife. Bake in the oven for about 25 minutes until golden brown.
