Mince Pies

Ingredients
- 200 g dried fruit
- 50 g mixed candied fruits
- 1 apple
- 100 g beef tallow
- 50 g cane sugar
- 25 g almond kernels
- 2 oranges (including zest)
- 1 lemon (including zest)
- 2 tsp gingerbread spice
- 2 tsp brandy
- 350 g flour
- 75 g white fat
- 75 g butter
- 1 egg
- 1 pinch salt
- 1 tbsp water
- 24 tortellini molds (6 cm Ø)
- sugar (for dusting)

Finely chop everything, mix and bake at 100°C for 3 hours in the oven with frequent stirring.

Sift flour onto a work surface, mix with salt and create a well in the center. Cut cold butter and fat into small pieces, distribute around the well, place the egg in the middle and cut all ingredients together with a knife to form small dough crumbs, quickly knead by hand into dough, shape into a ball, wrap in cling film and chill for about 30 minutes.

Roll out shortcrust dough and cut or wheel out 24 round shapes (7.5 cm Ø for the base) and 24 round shapes (6 cm Ø for the lid). Cut star shapes from the lids as desired.

Place the base dough into 24 greased tortellini molds, add 2 tbsp mince meat on each, then place the prepared lids on top and press edges together. Bake the Mince Pies in a preheated oven at 180°C for about 25 minutes until golden brown. Remove, dust with sugar and let cool.
