Mocha Cream Ice

Ingredients
- 300 ml whole milk
- 2 fresh eggs
- 60 g sugar
- 2 tsp vanilla sugar
- 250 ml cold strong espresso
- 300 ml whipping cream
- 50 ml whipping cream (half stiff whipped, for serving)

Prepare an ice cream maker or set a shallow metal bowl ready.

Prepare a warm and a cold water bath. Heat the milk in a pot.

Whisk the eggs with sugar and vanilla sugar in a metal bowl until well combined and then whisk over the hot water bath until creamy. Gradually pour in the hot milk. Then stir in the coffee slowly and chill the mixture in the cold water bath while whipping it.

Beat the whipping cream to stiff peaks and fold it gently into the mixture.

Finish the ice cream in the ice cream maker in about 25 minutes or freeze by placing the mixture in a shallow metal bowl for about 1 hour, then stir vigorously, freeze again for another hour and stir again. Freeze the ice cream for an additional 2 hours before serving.

For serving whip the remaining cream to a creamy consistency. Scoop balls from the ice cream, place them in cups and serve with the whipped cream.
