Ingredients

  • 4 eggs
  • 100 g sugar
  • 2 packets vanilla sugar
  • 100 g wheat flour
  • 60 g cornstarch (Mondamin)
  • 1 tsp Baking powder
  • powdered sugar (for dusting)

    Preheat the oven to 180°C fan.

    Separate the eggs. Beat egg whites with 50 g sugar and the vanilla sugar into stiff peaks. Whisk the yolks with the remaining sugar using a hand mixer on high for 1 minute until pale creamy. Mix flour, cornstarch and baking powder; sift over the egg mixture and stir briefly on low speed, then fold in the beaten egg whites. Fill a piping bag fitted with a round tip with the batter and pipe small spoon-shaped biscuits (not too large so they rise) onto a non-stick sheet or parchment paper. Bake for 10 minutes until golden yellow. Cool well before dusting with powdered sugar.
