Mirabelle Jam

Mirabelle jam by Spoonsparrow brings sweetness to bread. Ideal for breakfast!

Ingredients

  • 900 g mirabelle plums
  • 1 Organic lemon
  • 100 ml Orange Juice
  • 100 g coconut blossom sugar
  • 1 cinnamon stick
  • 1 nutmeg flower
  • 1 tsp allspice berries
  • 2 cloves
  • 0.5 tsp cardamom seeds
  • 8 g agar-agar (4 tsp)

Instructions

    Rinse the mirabelle plums, wash them, drain well, halve and pit them. Puree one half, finely chop the other half. Rinse the lemon hot, dry rub it, grate the zest and squeeze out the juice.

    Mix the mirabelle plums with coconut blossom sugar, lemon zest and juice. Lightly crush the spices in a mortar and fill a tea filter with them. Add to the fruit and let steep for about 3 hours.

    Meanwhile bring water to a boil in a large pot. Sterilize jars by boiling them for about 10 minutes.

    Pour the mirabelle jam into a pot and cook for about 2–3 minutes. Stir in agar-agar and simmer briefly. Pour the hot mixture into the prepared jars, seal immediately and leave the jars upside down for about 15 minutes.
