Ingredients

  • 1 kg green tomatoes
  • 1 vanilla pod
  • 500 g gelatin sugar (2:1)
  • 80 ml white wine vinegar

Instructions

    Blanch the tomatoes, shock them in cold water, peel, quarter and roughly chop. Split the vanilla pod lengthwise and combine with the sugar, tomatoes, and vinegar in a pot; stir and bring to a boil.

    Let it bubble for about 4 minutes, then fill well-sauced jars, seal tightly, turn upside down for 10 minutes, and let cool. Flip the jars back over and allow them to cool completely.
