Apple-Pear Jam

Ingredients

  • 750 g apples
  • 250 g pears
  • 1 Organic lemon
  • 2 vanilla pods
  • 2 star anise
  • 100 g coconut blossom sugar
  • 125 ml white grape juice
  • 15 g pectin

Instructions

    First, boil jars with lids for about 10 minutes in a large pot of hot water. Then remove the jars from the water and turn them over onto clean kitchen towels to cool.

    Wash, peel, and cut apples and pears into small pieces. Rinse the lemon hot, pat dry, and grate a little zest. Halve the lemon and squeeze out the juice. Split the vanilla pod lengthwise and scrape out the seeds. Combine apples, pears, lemon zest and juice, vanilla pod and seeds, star anise, 90 g coconut blossom sugar, grape juice, and 400 ml water in a pot. Stir and bring to a rolling boil for 3 minutes.

    Mix pectin with the remaining coconut blossom sugar and slowly stir into the fruit mixture. Boil for another minute. Fill the clean canning jars to the brim and seal immediately. Place the jars upside down for 10 minutes, then turn them right side up and let cool.
