Ingredients
- 500 g vegetable onions
- 25 g raw sugar
- 125 ml white wine vinegar
- 1 tbsp finely diced ginger (optional)
- 100 g raisins
- 2 Bay leaves
- 200 ml apple juice
- Salt
- freshly ground pepper
Instructions

Peel the vegetable onions, halve them and cut into very fine strips.

Melt brown sugar in a pot, deglaze with white wine vinegar, add the onions and optionally the diced ginger. Steam over medium heat uncovered for 10 minutes. Add raisins, bay leaves and apple juice, stir occasionally and let simmer gently for 45 minutes, adding a little water if needed. Season the onion marmalade with salt and freshly ground pepper.
