Mini Quiches with Feta and Caramelized Onions

Ingredients
- 150 g cold butter
- 300 g flour
- 1 egg
- 1 yolk
- 1 tsp salt
- 2 onions (or 4-5 shallots)
- 1 tbsp Olive Oil
- 0.5 tsp Sugar
- 50 ml dry white wine
- 200 g feta
- 100 g cream cheese
- 50 ml milk
- 3 eggs
- 1 tbsp coarsely chopped basil
- 1 tsp finely chopped parsley
- Salt
- Pepper (freshly ground)

- butter (for the molds)

Cut the cold butter into small pieces and quickly knead with flour, egg, yolk, salt, and 2 tbsp cold water into a smooth shortcrust dough. Shape into a ball, wrap in cling film, and refrigerate for 1 hour.

Preheat the oven to 200°C (400°F) fan‑forced. Lightly butter the mini tart tins. Peel and finely dice the onions. Heat oil in a pan, slowly sauté the onions until translucent, sprinkle with sugar, caramelize, deglaze with wine, and let reduce completely. Remove onions from the pan and let cool.

Crush the feta. Mix cream cheese with milk. Whisk in eggs and herbs, season with salt, pepper, and nutmeg. Fold in the feta and cooled onions.

Roll out the dough between two sheets of parchment paper, line the tins, shaping a rim each time. Fill the tins with the onion‑cheese mixture. Bake on the middle rack for 25–30 minutes in the preheated oven.
