Mini Broccoli Pizzas

Ingredients
- 125 g low‑fat quark
- 50 ml milk
- 50 ml cooking oil
- 1 egg (medium size)
- 250 g flour
- 1 packet baking powder
- 3 tbsp olive oil
- 375 g passata
- 3 tsp pizza seasoning
- 500 g broccoli
- Salt
- 4 tomatoes
- 500 g mozzarella
- a touch of basil
Instructions

Whisk quark with milk, oil, egg and salt. Mix flour with baking powder and fold into the wet mixture. Divide dough into 16 portions and roll each into a circle about 10 cm in diameter.

Line two baking trays with parchment paper and arrange dough circles on them. Brush lightly with olive oil.

Stir passata with pizza seasoning and spread over the dough.

Break broccoli into florets, rinse and blanch in salted water for 5 minutes. Shock in cold water and drain well.

Rinse tomatoes and slice. Slice mozzarella as well.

Top dough circles with broccoli, tomato slices and mozzarella. Bake in a preheated oven at 200 °C (gas: level 3‑4, fan: 180 °C) for about 20 minutes. Garnish with basil.
