Pastrami Cheese Sandwich

Ingredients

  • 2 egg tomatoes
  • 1 short baguette
  • 2 tbsp butter
  • 1 tbsp mayonnaise
  • Salt
  • Cayenne pepper
  • 4 slices Swiss-style cheese (Emmental type)
  • 200 g pastrami

    Wash the tomatoes, pat dry, remove stems and slice thinly. Cut the baguette lengthwise in half and spread butter on each side. Toast in the oven at 180°C for 5 minutes, then remove and spread mayonnaise. Layer one half with pastrami, tomato slices, and cheese; season with salt and pepper.

    Return to the oven, broil briefly on the top rack until the cheese begins to melt, cover, then cut diagonally. Wrap the ends in foil for easier handling and garnish with parsley before serving hot.
