Ingredients

  • 500 g ripe tomatoes
  • 2 cloves garlic
  • 1 Shallot
  • 2 red chili peppers
  • 2 tbsp olive oil
  • 2 tbsp Tomato paste
  • 150 ml Vegetable broth
  • Salt
  • black pepper (freshly ground)
  • dark balsamic vinegar (optional)
  • 1 clove garlic
  • 500 g ground beef
  • 1 tsp medium-hot mustard
  • 1 egg
  • 4 Tbsp breadcrumbs
  • 6 leaves lettuce
  • 4 tomatoes
  • 2 red onions
  • 4 burger buns
  • 1 Tbsp clarified butter
  • 4 Tbsp mayonnaise
  • 12 tortilla chips
  • 2 white onions
  • 200 g Flour
  • 250 ml light beer
  • 1 egg
  • 0.5 tsp Salt
  • 1 Egg white
  • 500 ml vegetable oil (for frying)

Instructions

    For the salsa, blanch the tomatoes, shock them in cold water, peel, quarter, core and dice finely. Peel and finely chop the garlic and shallot. Wash the chilies, cut lengthwise in half, remove seeds and finely chop as well. In a pot heat the oil and sauté the garlic with the shallot and chilies. Add the tomatoes, stir in the tomato paste and deglaze with broth. Season with salt and pepper and simmer over medium heat for 15 minutes. Adjust with vinegar.

    For the beef burgers, peel and finely chop the garlic and mix it with the ground beef, mustard, egg, and breadcrumbs. Season with salt and pepper.

    Wash and dry the lettuce, then tear into bite‑sized pieces. Wash the tomatoes, remove stems, and slice them. Peel the red onions and cut into thin rings. Peel the white onions and cut into slightly wider rings.

    For the batter, sift flour into a bowl, add beer, egg, and salt, stir in, cover with a cloth and let rest for 15 minutes. Then mix vigorously. Fold in the lightly beaten egg white. Dip the white onion rings into the batter and fry them in hot oil until golden brown. Drain on paper towels.

    Halve the buns and toast them lightly in a hot grill pan, then remove.

    Shape four patties from the beef mixture and cook them in the grill pan with clarified butter until browned on both sides.

    Spread mayonnaise on the bottom bun, layer the fried onion rings, lettuce, tomato slices, and red onion rings. Add one patty and a few tortilla chips on top of each, drizzle with salsa, place the top bun, and serve.
