Ingredients

  • 400 g ground meat (mixed)
  • 1 Shallot
  • 1 Garlic clove
  • 1 tbsp chopped parsley
  • 2 slices toast bread
  • 1 egg
  • 0.5 tsp seasoned broth
  • 2 tbsp breadcrumbs (as needed)
  • 2 tbsp clarified butter
  • 2 Tomatoes
  • 1 small pressed garlic clove
  • 1 tsp chopped dill
  • 1 tbsp White Wine Vinegar
  • 1 blue onion
  • 1 bundle arugula
  • 4 ciabatta rolls
  • 2 tbsp garlic oil
  • Salt
  • Pepper

Instructions

    Soak the toast bread in lukewarm water and squeeze out excess liquid. Peel and finely chop the shallot and garlic clove. Mix ground meat, toast bread, onions, garlic, seasoned broth, parsley, and egg thoroughly. Knead in enough breadcrumbs to form a well-shaped dough. Shape four meat patties and slowly brown them all sides in hot clarified butter.

    Halve the ciabatta rolls, brush the cut surfaces with garlic oil, and briefly toast them in the oven. Wash, rinse, and dry shake the arugula. Wash the tomatoes, slice eight thin rounds, peel the remaining skins, and dice small. Mix dill, garlic, and vinegar into the tomato cubes and season.

    Peel the onion and slice into fine rings. Layer the lower ciabatta halves with arugula, tomato slices, and onion rings; place one meat patty on each. Top with additional onion rings and diced tomatoes. Tilt the top half over and serve immediately.
