Hamburger with Turkey Patty, Vegetables and Potatoes

Ingredients

  • 4 burger buns
  • 600 g new potatoes
  • 350 g ground turkey
  • 1 egg
  • breadcrumbs
  • 0.5 tsp paprika powder
  • 1 tsp spicy mustard
  • 1 tsp oregano (chopped)
  • 1 small aubergine
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1 onion
  • 1 Garlic clove
  • olive oil
  • 2 tbsp basil (chopped)
  • 1 tbsp dill (chopped)
  • Sea salt
  • black pepper (freshly ground)

Instructions

    Wash potatoes and steam for about 20 minutes.

    Mix ground turkey with egg, paprika powder, mustard and oregano. Add enough breadcrumbs to form a well-shaped mixture. Season with sea salt and black pepper. Shape into four burgers, brush lightly with oil and grill each side for about 3-4 minutes.

    Wash aubergine and dice it small.

    Peel bell peppers, halve them, remove seeds and dice them.

    Peel onion and garlic and finely dice them. Sauté in 2 tbsp hot oil, add peppers and aubergine and simmer for about 3-4 minutes. Finally add basil and season with sea salt and black pepper. All liquid should evaporate.

    Quarter potatoes, toss them in 2 tbsp hot olive oil and finally add dill. Season with salt.

    Halve buns, place burgers on them, distribute vegetables over the patties and close with the bun tops. Serve with the potatoes.
