Ingredients

  • 1 Lime
  • 200 g sugar
  • 200 ml water
  • 100 ml dry champagne
  • 1 cantaloupe melon
  • Lemon balm
  • lime zest

Instructions

    Wash, peel, and juice the lime.

    Add sugar, lime zest and juice, and water to a pot; bring to a boil while stirring and simmer for about 3 minutes. Strain and top with champagne.

    Cut the melon in half, remove seeds, and peel. Chop the flesh, puree finely, and mix with the sugar syrup.

    Pour everything into a metal bowl and place in the freezer for about 6 hours. After an hour stir well with a whisk; continue freezing, stirring every half hour!

    Serve the sorbet in chilled glasses and garnish with lemon balm and lime zest.
