Melon Salad with Fried Shrimp

Ingredients
- Charentais melon (1 small each)
- Honeydew melon (1 small each)
- 400 g large shrimp (pre-cooked)
- Salt
- pepper (from grinder)
- 2 tbsp oil
- 1 Spring onion
- 1 red chili pepper
- 4 Tbsp lime juice
- 5 tbsp olive oil
- 2 tsp lime zest (fine strips)
Instructions

Halve the melons, remove seeds, cut into wedges, peel and slice flesh into rounds or bite‑sized pieces. Wash the spring onion and slice thinly; wash, deseed, and finely slice the chili pepper.

Whisk lime juice with salt, pepper, and olive oil; fold in spring onions and chilies.

Heat a large pan with hot oil and fry shrimp for about 1–2 minutes per side, seasoning with salt and pepper.

To serve, arrange melon wedges on a plate, top with shrimp, and drizzle the salad sauce over. Sprinkle lime zest as desired.
