Ingredients

  • 1 Shallot
  • 1 small tart apple
  • 1 tbsp Lemon Juice
  • 400 g cooked beetroot (vacuum packed)
  • 250 g sour cream
  • 250 g mild herring fillet
  • pepper (ground)
  • sugar
  • 2 tbsp chives

Instructions

    Peel the shallot and finely dice it. Wash the apple, remove the core and cut into small cubes. Mix with lemon juice. Dice the beetroot.

    Blend about 1/4 of the beetroot with sour cream to make a puree. Then combine with the shallot, beetroot cubes, and apple. Rinse the herring, pat dry, and cut into bite‑sized pieces.

    Add the mixture to the salad and season with pepper and sugar. Let it chill in the refrigerator for at least 1 hour. Taste again, fill four glass jars, and sprinkle with chives before serving. A fresh loaf of bread pairs well.
