Ingredients

  • 1 eggplant
  • 1 Zucchini
  • 1 red bell pepper
  • 300 g Mushrooms
  • 1 Garlic clove
  • 4 tbsp olive oil
  • 4 tbsp basil pesto
  • 4 tortilla sheets
  • Salt
  • Pepper

Instructions

    Dice the eggplant and lightly salt it. Halve the zucchini lengthwise and slice into rounds.

    Clean the mushrooms and cut them into pieces. Wash, halve, seed, and slice the bell pepper into strips. Arrange the vegetables on a greased baking sheet, drizzle with the remaining oil, and bake in a preheated oven at 200°C for about 20 minutes.

    Meanwhile, heat the tortilla sheets according to package instructions and spread pesto over them.

    Season the cooked vegetables with salt and pepper, distribute onto the tortillas, fold in the sides, and roll tightly. Slice diagonally and wrap the lower end with parchment paper. Serve immediately.
