Chicken Fajitas

Ingredients

  • 1 Lime
  • 350 g Chicken breast fillet
  • 1 Garlic clove
  • 4 tbsp corn oil
  • 0.25 tsp chili powder
  • Salt
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 onion
  • 1 green bell pepper
  • 2 Tomatoes
  • 1 Avocado
  • 4 wheat tortillas

Instructions

    Rinse the lime hot, dry it, cut in half and squeeze out the juice. Wash the chicken, pat dry and slice into strips. Peel the garlic and press through a press. In a bowl mix the chicken with 2 tbsp oil, 2 tbsp lime juice, the garlic, chili, some salt, coriander and cumin. Cover and let marinate in the fridge for at least 30 minutes.

    Peel the onion and cut into rings. Wash the bell pepper, trim it and slice into strips. Wash the tomatoes, remove the stems and dice them.

    Halve the avocado, remove the pit and peel it. Dice it and immediately mix with the remaining lime juice. Heat the rest of the oil in a pan. Take the chicken out of the marinate and sear it in the pan for about 2 minutes. Add the onion and bell pepper and cook for another 3-4 minutes. Gently fold in the tomatoes.

    Warm the tortillas briefly in a dry pan over medium heat. Distribute the chicken fajitas on the tortilla sheets, top with avocado cubes, fold the tortillas and serve.
