Meatloaf with Potatoes and Mushroom Sauce

- 500 g mixed ground meat
- 500 g Potatoes
- 1 old-fashioned roll
- 1 egg
- 1 onion
- 1 Garlic clove
- 0.5 bunch Parsley
- 0.5 bunch Chives
- 4 tbsp olive oil
- Salt
- Pepper
- 1 untreated lemon
- 150 g Mushrooms
- 2 tbsp heavy cream
- 1 cup yogurt
- 1 egg yolk
- 0.5 bunch Chives
- 20 g butter
- 125 ml broth (from a can)

Soak the roll in 125 ml lukewarm water, squeeze out excess liquid and mix well with the egg and ground meat. Peel and finely chop onion and garlic, then knead into the mixture. Season with salt and pepper. Wash, dry, and finely chop chives and parsley, then knead them in. Shape everything into a loaf.

Peel and cube potatoes. Line an oven tray with foil and brush with olive oil. Place the meatloaf on top and arrange potatoes around it. Drizzle with lemon juice and more olive oil. Bake at 175 °C for 45 minutes.

Meanwhile, melt butter for the sauce. Clean and slice mushrooms, then sauté in butter. Deglaze with broth. Whisk yogurt, cream, and egg yolk together, then stir in the mushrooms. Season with salt and pepper. Slice chives into rings and fold in.

Slice the meatloaf, serve with potatoes and mushroom sauce.
