Chicorée-Bohnen-Salat mit Radicchio und Oliven

Ingredients

  • 200 g dried white beans
  • 1 chicory
  • 1 small radicchio
  • 1 Red Onion
  • 1 Garlic clove
  • 125 g green olives (pitted)
  • 2 tbsp white wine vinegar
  • 2 tbsp lemon juice
  • 1 tsp sea salt
  • pepper (coarsely ground)
  • 0.5 tsp liquid honey
  • 0.5 tsp medium-hot mustard
  • 4 tbsp olive oil

Instructions

    Soak the beans for at least 12 hours, preferably overnight, in cold water. The next day discard the soaking water and cook the beans in boiling water for 25-35 minutes until al dente.

    Clean, wash, dry, and slice the radicchio and chicory into strips. Peel and thinly slice the onion. Finely mince the garlic. Slice the olives into rings.

    Whisk together vinegar, lemon juice, garlic, salt, pepper, honey, and mustard. Stir in the oil. Add the dressing to the beans and gently mix. Fold in the chicory and radicchio strips, onions, and olive rings. Cover and chill for at least 3 hours.
