Mascarpone Chocolate Dessert with Chestnuts

Ingredients
- 100 g dark chocolate (70% cocoa)
- 100 g milk chocolate (40% cocoa)
- 250 ml heavy cream (30% fat)
- 30 g Butter
- 10 ml rum (or cognac)
- 125 g chestnuts (pre-cooked and peeled)
- 75 ml heavy cream (min 30% fat)
- 1 tsp cinnamon
- 1 tbsp sugar (optional)
- 120 g mascarpone
- 2 tbsp plain yogurt
- 1 packet vanilla sugar
- 1 tbsp Lemon Juice
- 4 dried apricots (cut into pieces)

Chop the chocolates separately and place each in a small bowl. Boil half of the cream, then pour it over each chocolate, stirring until melted; let sit for about 3 hours. Melt the butter and cool.

Gradually stir the dark chocolate mixture with rum. Whip the remaining cream stiffly. Fold half into the light chocolate cream, reserving the rest for garnish. For the chestnut spread, blend chestnuts with a third of the cream, then mix in sugar and cinnamon.

Whip the remaining cream stiffly and fold in. Chill until ready to serve. Combine all ingredients for the mascarpone cream, chill until serving time. Layer the creams in four glasses, top with a dollop of whipped cream, and scatter dried apricot pieces as desired.
