Orange Mousse

Ingredients
- 2 oranges (unprocessed)
- 1 lemon (unprocessed)
- 6 sheets white gelatin
- 3 eggs
- 100 g sugar
- 300 g strained yogurt
- 200 g whipping cream
- 40 g white chocolate
- 2 tsp grated orange zest
Instructions

Wash the oranges and lemon hot, dry them, finely grate their peels, then halve and squeeze out the juice.

Soak gelatin in cold water.

Separate egg whites. In a metal bowl whisk yolks with sugar, add grated zest and citrus juices, then continue whisking over a hot water bath until the mixture becomes frothy, light and airy.

Squeeze excess water from gelatin, dissolve it in a little warm cream, then add to the custard and mix well. Let cool slightly, fold in yogurt, and refrigerate until the mixture starts to set.

Beat egg whites and cream stiffly, then fold each into the custard sequentially. Pour the orange custard into small molds or hollowed-out orange halves and chill for about 3 hours. Garnish with grated white chocolate and extra orange zest.
