Ingredients

  • 2 Eggs
  • 80 g sugar
  • Salt
  • 60 g flour
  • 20 g starch
  • 1 tbsp cocoa powder
  • 200 g mixed berries (raspberries, currants, blueberries)
  • 2 tbsp powdered sugar
  • 10 ml rum
  • 120 g dark chocolate
  • 100 ml whipping cream
  • 100 g plain yogurt
  • 200 g low‑fat quark
  • 60 g sugar
  • dark chocolate shavings (for garnish)

Instructions

    Preheat the oven to 180°C with upper and lower heat.

    Separate the eggs. Beat the yolks with half of the sugar until fluffy. Whisk the whites with a pinch of salt, then gradually add the remaining sugar until stiff peaks form.

    Fold the egg white foam into the yolk mixture. Sift together flour, starch, and cocoa powder; gradually fold into the batter. Pour into a 20 cm diameter springform lined with parchment paper, smooth the surface, and bake for about 35 minutes in the preheated oven. Test with a toothpick.

    Remove the base from the pan, let it cool, then cut into 1 cm cubes.

    Rinse, wash, trim, and drain the berries well. Mix with powdered sugar and rum; let rest for 30 minutes.

    Melt the chocolate over a gentle water bath, remove from heat, and allow to cool.

    Whip the cream until stiff. Combine yogurt, quark, sugar, and melted chocolate; fold in the whipped cream.

    Layer one‑third of the cake cubes onto glasses, top with one‑third of the berries, spread half of the chocolate cream over them, add another third of cake cubes and berries, then cover with the remaining cream. Sprinkle the rest of the cake cubes and berries on top, dust with chocolate shavings, chill for 30 minutes, then serve.
