Ingredients

  • 4 apples
  • 150 g marzipan base
  • 3 tbsp apricot brandy
  • 1 tbsp apricot jam
  • 2 tbsp chopped almond kernels
  • 4 almond kernels
  • 1 Egg white
  • 1 packet vanilla sugar

Instructions

    Wash the apples, pat dry, and use a core remover to generously remove the cores.

    Whisk the marzipan with apricot brandy into a smooth mixture. Add apricot jam and chopped almonds. Fill three‑quarters of each apple with the mixture. Place in a buttered baking dish and bake at 250 °C for 25 minutes.

    Beat the egg whites and vanilla sugar into stiff peaks, fold them into the remaining almond mixture, and pipe onto a pastry bag. Place ten minutes before the end of baking to prevent browning. Garnish with almonds, finish baking, and serve hot.
