Baked Apple with Dates

Ingredients

  • 4 apples
  • 8 fresh dates
  • 40 ml dry sherry
  • 4 tbsp hazelnuts
  • 2 tbsp orange jam
  • 0.5 tsp grated orange zest
  • 0.5 tsp fresh grated ginger
  • butter (for the pan)
  • 2 tbsp butter crumbles
  • 100 ml White wine
  • 100 ml whipping cream

Instructions

    Peel, pit and dice the dates. Drizzle with sherry and let steep for at least 15 minutes. Roast the hazelnuts, then roughly chop them. Mix the marinated dates with orange jam, zest, and ginger.

    Cut off the tops of the apples and use a cutter to remove the cores. Place the apples in a buttered pan, fill them, and spread the remaining mixture around the apples. Replace the tops, top with butter crumbles, and bake in a preheated oven at 200°C for about 20–30 minutes. After ten minutes, drizzle white wine over the apples.

    Remove from the oven, pour in the cream, warm briefly again, sweeten the sauce to taste if desired, and serve.
