Marzipan Quark Rings
A Marzipan-Quark ring is a round treat for coffee gatherings – not just for Easter. The sweet almond paste and creamy quark blend into a delightful, slightly nutty pastry that pairs wonderfully with tea or coffee.
Ingredients
- 150 g Whole wheat flour
- 150 g spelt flour
- 3 tsp baking powder
- 75 g sugar (4 tbsp)
- 1 pinch salt
- 150 g Low-Fat Quark
- 100 ml milk (1.5% fat)
- 80 ml Rapeseed oil
- 100 g marzipan paste
- 25 g chopped pistachio nuts (2 tbsp)
- 1 egg yolk

Mix both flours and baking powder in a bowl. Add sugar, salt, quark, milk, and oil. Knead with hand mixer hooks until smooth, then transfer to a lightly floured surface.

Coarsely chop the marzipan, fold it into the dough along with pistachios, and knead by hand until incorporated.

Divide the dough into 20 portions and roll each into thin ropes about 30 cm long. Twist two ropes together loosely several times to form a cord.

Shape each cord into a ring, pressing seam areas slightly. Line two baking sheets with parchment paper and place rings on them. Separate the egg; whisk yolk with one tablespoon of water (reserve whites for another use).

Brush rings with the yolk mixture. Bake in a preheated oven at 180 °C (160 °C fan) on the lowest rack for about 15 minutes. Remove rings and cool on a wire rack.
