Banana Quark Muffins

Ingredients
- 2 ripe bananas
- 1 egg
- 300 g low‑fat quark
- 75 g butter
- 1 Organic Orange
- 150 g wheat flour
- 50 g whole grain semolina
- 2 tsp Baking powder
- powdered sugar from raw cane sugar (for dusting)
Instructions

Peel the bananas and mash them in a bowl with a fork. Mix the egg, quark, butter, and mashed banana together. Wash the orange hot, dry it, grate the zest, and squeeze out the juice. Add both to the batter and stir well. Quickly fold in the flour, baking powder, and semolina.

Place paper muffin cups into the depressions of a muffin tin and fill with the batter. Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 25–30 minutes or until a wooden stick comes out clean.

Remove the banana quark muffins from the oven, let them cool, and dust with powdered sugar.
