Avocado Cream on Whole Grain Bread

Avocado cream on whole grain bread from Spoonsparrow: rich in unsaturated fatty acids, vitamin C and potassium.
Ingredients
- 1 small organic lime
- 0.5 Avocado
- Salt
- black pepper
- 50 g whole grain bread (1 slice)
- 4 Cherry Tomatoes
- 5 g instant grain coffee (1 tbsp)
- 125 ml Milk (1.5% fat)

Rinse the lime hot, dry it and finely grate some zest. Squeeze out the juice.

If needed, pit half an avocado and peel it with a vegetable peeler. Roughly cube the flesh and place it in a small bowl.

Add the lime zest and 1 tbsp of lime juice. Mash finely with a fork. Season with salt and pepper, then taste and adjust with the remaining lime juice. Spread the avocado cream on the whole grain bread. Wash the cherry tomatoes, halve them and arrange on top of the bread.

Pour instant grain coffee over 75 ml boiling water, stir in the milk, and serve alongside the avocado toast.
