Ingredients
- 500 g black olives
- 4 cloves garlic
- 1 onion
- 3 bay leaves
- 1 tbsp rosemary
- 1 tbsp thyme
- 1 piece untreated orange zest
- 12 coriander seeds
- 5 dried red chili peppers
- 500 ml olive oil
Instructions

Peel the onion and cut it lengthwise into 8 pieces. Peel the garlic and halve each clove. Layer the olives alternately with onion and garlic in a jar. Thoroughly mix the spices with the olive oil and pour over the contents. Let everything steep for at least 2 days. Store in a cool place.

The olives are well sealed and keep for 3 months.
