Ingredients
- 225 g dark chocolate couverture
- 1 tbsp rose water
- 4 egg whites
- Pinch of salt
- 400 ml heavy cream (at least 30% fat)
- 2 tbsp powdered sugar
- 4 small organic rose petal
- 4 chocolate truffles

Coarsely chop the chocolate and melt it over a hot, non-boiling water bath. Remove from heat, stir in the rose water, and let the chocolate cool slightly.

Beat the egg whites with a pinch of salt until stiff peaks form. Whip the cream with the powdered sugar until stiff as well. Fold the egg whites into the slightly cooled liquid chocolate, then fold in the whipped cream.

Place the mixture in the refrigerator for about 30 minutes, then fill a piping bag fitted with a star tip and pipe into small cups. Refrigerate for an additional 2 hours. Serve garnished with rose petals and chocolate truffles.
