Mangoküchlein

Ingredients

- 40 g raisins
- 20 ml orange liqueur
- 1 Mango
- 1 apple
- 3 eggs
- 1 pinch salt
- 150 g butter
- 50 g powdered sugar
- 50 g honey
- 1 vanilla pod (aroma)
- 1 untreated orange
- 75 g flour
- 75 g finely ground almond kernels

Preheat the oven to 220°C with upper and lower heat. Brush the baking cups with oil.

Mix the raisins with the liqueur and let sit.

Peel the mango and apple. Cut the mango flesh from the pit into strips. Quarter the apple, remove the core, and dice the quarters.

Separate the eggs; beat the whites with salt until stiff peaks form. Cream the butter with powdered sugar, honey, and vanilla aroma. Gradually add the yolks and beat to a white‑creamy consistency. Grate the hot orange peel into the yolk mixture. Squeeze the juice and gradually fold in. Sift flour with almonds over the batter and gently fold in. Fold the meringue with raisins and fruits. Fill the cups and bake for about 25 minutes until golden brown. Remove from oven, cool, and release from the cups.
