Ingredients

  • 120 g milk chocolate
  • 50 g butter
  • 4 tbsp whipping cream
  • 40 g ground hazelnuts
  • 60 g ground almonds (peeled)
  • 110 g powdered sugar
  • 2 egg whites
  • 20 g sugar
  • 15 g cocoa powder

Instructions

    Chop the chocolate and place it in a metal bowl. Melt over a hot water bath. Cut the butter into pieces, add with the cream and hazelnuts, and stir until smooth. Remove from heat, let cool, then refrigerate.

    Preheat the oven to 150°C (302°F) on both top and bottom heating elements.

    Grind the almonds with powdered sugar finely and sift through a fine sieve onto a baking sheet. Bake in the oven for 5-7 minutes, then allow to cool.

    Beat the egg whites until stiff, then gradually add the sugar while beating. Stir in the cocoa powder. Add the almond mixture on top and fold gently. Fill a piping bag and pipe about 30 dots onto parchment paper on a baking sheet. Let them dry slightly for about an hour. Then bake again at 150°C for 10-12 minutes. Carefully remove from the tray and cool.

    Spread chocolate-nut cream on one side of half the macarons and gently press another macaron on top.
