Almond Orange Shortbread

Ingredients
- 100 g crumbed candy
- 250 g flour
- 1 tsp Baking powder
- 2 packets bourbon vanilla sugar
- zest of 1 untreated orange
- 1 egg (medium size)
- 1 egg yolk
- 50 g ground almonds
- 175 g butter
- 2 tbsp sugar
- juice of 1 orange
- 60 g trimmed almonds (45 trimmed almonds)
- powdered sugar (for dusting)
Instructions

Grind the crumbed candy in an electric grinder until fine, set aside 2 tbsp for dusting. Mix flour and baking powder in a bowl. Add candy, vanilla sugar, orange zest, egg, yolk, almonds, and butter pieces.

Cut everything with a knife to create dry crumbs, then knead quickly by hand into a smooth dough. Shape the dough into a ~2 cm thick rectangle and wrap in foil; refrigerate overnight.

Simmer sugar with orange juice until syrupy. Cut the dough into cherry‑size pieces (~15 g) and roll into balls with lightly floured hands. Place on baking trays lined with parchment paper.

Press an almond onto each ball and brush thinly with orange syrup. Sprinkle with candy. Bake in a preheated oven at 180 °C (gas: level 2, convection: 160 °C) for about 12 minutes. Dust the cookies with powdered sugar.
