Ingredients

  • 1 dried chili pepper
  • 100 g brown sugar
  • 1 Orange (juice)
  • 1 lemon (juice)
  • 2 mangoes

Instructions

    Crush the chili pepper in a small pot with boiling water, let it simmer for 1-2 minutes, then drain.

    Bring the sugar, orange juice, lemon juice and 250 ml water to a boil. Simmer 1-2 minutes until the sugar is fully dissolved. Remove from heat and cool.

    Peel the mangoes, cut the flesh away from the pit and blend with the syrup until smooth. Stir in the chili and finish the sorbet in an ice cream maker. Alternatively pour into a shallow metal bowl, cover and freeze for at least 3 hours, stirring vigorously with a fork every now and then.
