Fruitful Mango Sorbet

Ingredients
- 3 large ripe mangos
- 4 tbsp Lemon juice
- 4 tbsp sugar
- 1 Egg white
- 1 tbsp lime juice
- honey (optional)
Instructions

Peel two mangos and cut them into slices, catching the juice. Add the fruit flesh to the juice and blend with 2 tbsp water and the lemon juice.

Pass the puree through a sieve, then stir in the sugar and lightly beaten egg white.

Freeze the mixture in an ice cream maker or place it in a shallow metal bowl in the freezer for about 3 hours, stirring vigorously every 30 minutes to prevent large crystals from forming.

Peel the remaining mango, dice the flesh into very small cubes, mix with lime juice, and sweeten with honey if desired.

Use an ice scoop to form balls from the sorbet and serve them arranged with the mango cubes on top.
