Ingredients
- 1 ripe Mango
- 2 Tomatoes
- 2 Spring Onions
- 1 red chili pepper
- 1 Garlic clove
- 2 cm ginger
- 3 tbsp olive oil
- 1 Lime (juice)
- Salt
- Pepper (freshly ground)
- 2 stalks Cilantro

Peel the mango, remove the flesh from the pit and dice into small cubes. Wash the tomatoes, halve them, discard seeds and stems, then dice similarly. Clean the spring onions, trim roots, and slice into thin rings. Halve the chili pepper, deseed, wash, and cut into fine strips. Peel garlic and ginger, then finely dice both. Combine mango, tomatoes, spring onions, chili, ginger, and garlic in a bowl with olive oil, lime juice, salt, and pepper, mixing well. Shake the washed cilantro dry, roughly chop the leaves, and fold them into the salsa. Taste and adjust seasoning before serving.
