Mango Ice

Ingredients
- 1 Lime
- 100 g sugar
- 100 ml mango juice
- 100 ml champagne
- 500 g mango flesh
- 200 g whipping cream
- 3 Tbsp finely chopped basil
- 4 lychees
- basil (as garnish)
- 0.5 Mango
- 1 Pomegranate
- 0.25 l white rum
- 2 tbsp powdered sugar

Prepare the sparkling pomegranate seeds 2 days in advance. Cut off the base and top of the pomegranate. Score the skin lengthwise and fold it back with your hands. Release the seeds with a teaspoon. Place the seeds in a screw‑top jar, mix with powdered sugar, pour rum over them, seal and store for 2 days.

Wash and juice the lime for the sorbet.

Combine sugar, lime juice, and mango juice in a pot, stir until boiling, then simmer for about 3 minutes. Strain and top with champagne.

Chop the mango flesh and blend it finely with the sugar water.

Pour everything into a shallow metal bowl, place it in the freezer, and stir well with a fork every 30 minutes while freezing.

Before serving whip the cream to stiff peaks and fold in the chopped basil.

Slice the mango into wedges and arrange on plates. Scoop the sorbet onto the fresh mango. Spoon the basil cream over it with a star tip, and garnish with lychees, pickled pomegranate seeds, and basil leaves.
