Ingredients
- 2 limes (juice only)
- 4 Tbsp sunflower oil
- 1 tsp brown sugar
- 2 tbsp white wine vinegar
- 3 tbsp white wine
- 1 piece ginger (walnut-sized)
- 1 chili pepper
- 1 Garlic clove
- Salt
- 1 ripe Mango
- 4 bunches of various herbs (e.g., mint, dill, basil, coriander, chives)
Instructions

Peel the mango, cut in half, remove the pit and slice the flesh into wide strips. Wash the herbs and pluck the leaves. Peel the ginger and garlic.

Slice the chili pepper lengthwise and remove the seeds. Roughly chop the ginger and garlic, then cut the chilies into fine strips. Whisk lime juice, oil, sugar, vinegar, and wine together to make a vinaigrette.

Add the chilies, ginger, and garlic to the bowl and season with salt and sugar. Mix in the mango and herbs, then pour the vinaigrette over the salad.
