Try this refreshing mandarin kiwi salad!

Ingredients

  • 4 kiwis
  • 4 mandarins
  • 2 tbsp lemon juice
  • 20 g coconut chips (2 tbsp)

Instructions

    Peel the kiwis and mandarins, slice them thinly; place both in a shallow dish. Drizzle lemon juice over the fruit and let sit for about 10 minutes.

    Meanwhile, toast the coconut flakes in a dry pan until golden brown.

    Layer the fruit slices alternately into four glasses, drizzle with the collected juice, and sprinkle with toasted coconut flakes.
