- 1 head Chinese cabbage
- 2 Spring Onions
- 100 g canned corn
- 4 tbsp olive oil
- 4 tbsp white balsamic vinegar
- Salt
- pepper (ground)
- 3 tomatoes
- 2 tbsp pumpkin seeds

Wash and trim the Chinese cabbage, then cut into wide strips. Wash and trim the spring onions, slicing them into rings. Drain the corn.

Whisk together olive oil, salt, and vinegar; combine with cabbage, corn, and onions, letting it rest for about 10 minutes. Wash tomatoes, slice them, and fold into the salad. Plate on bowls and sprinkle with pumpkin seeds before serving.
