Mango Salad with Fried Shrimp

Ingredients

  • 8 large shrimp (peeled, tail-end intact)
  • 5 tbsp olive oil
  • 1 Garlic clove
  • 2 limes
  • 1 Spring onion
  • 1 Mango
  • 2 tbsp white wine vinegar
  • Salt
  • black pepper (freshly ground)
  • 1 tsp maple syrup
  • 1 chili pepper
  • coriander leaves

Instructions

    Whisk 2 tbsp oil with finely chopped garlic and lime juice. Score the shrimp along the back and remove the black vein. Toss the shrimp in the mixture and let marinate for about 30 minutes.

    Wash, trim, and cut the spring onion white and light green parts into ~10 cm long thin strips; place in ice water.

    Peel the mango and slice the flesh into wedges around the stone.

    Whisk vinegar, salt, pepper, syrup, and 2 tbsp oil together; taste to adjust seasoning.

    Trim the chili pepper, split lengthwise, deseed, remove white membranes, wash, cut into fine strips, then halve them crosswise.

    Heat 1 tbsp oil in a pan and sear shrimp for about 2 minutes per side until golden.

    Remove spring onions from water and pat dry.

    Plate mango wedges and fried shrimp; drizzle with dressing and garnish with spring onion slices, chili strips, and coriander leaves. Serve immediately.
