A fresh salad featuring cucumber, tomato, onion, olives, and feta cheese, served with a simple vinaigrette. Try this recipe from Spoonsparrow!

Ingredients

  • 250 g mini cucumbers
  • 6 tomatoes
  • 2 onions
  • 80 g black olives (small)
  • 150 g sheep cheese
  • 1 tsp dried thyme
  • 5 tbsp white wine vinegar
  • 5 tbsp olive oil
  • Salt
  • Pepper

    Wash the cucumbers and cut them into pieces. Wash the tomatoes, remove the stem, and slice them into wedges. Peel the onions, halve them, cut into thin half-rings, briefly blanch in boiling water, shock with ice water, and drain. Slice the sheep cheese into 4 slices and mix with thyme.

    Combine all ingredients for the dressing, add tomatoes, cucumbers, and olives, stir, divide among four bowls, top with onions and cheese, and serve with fresh white bread.
